For the second episode of Abajo’s Amigos de la Casa series, we are delighted to host Chef Juan Camilo Quintero of Borgo San Felice. Originally from Colombia, Chef Juan’s dishes are a beautiful blend of his roots and his love for Italy. Trained by culinary icons like Massimo Bottura and Enrico Bartolini, he has earned a Michelin star for his innovative and ingredient-focused cuisine.
Known for ethical sourcing, in 2022 he was awarded the Michelin Green Star, alongside accolades from Food and Wine Italy, Identità Golose, and Gambero Rosso. Since 2019, Chef Juan has been the Executive Chef at Borgo San Felice, where he brings the local Tuscan flavours to life with a refined, international touch.
Join us in Abajo on Monday 19th August, as Chef Juan Camilo Quintero and Chef Miller Prada collaborate on a special menu that blends Quintero’s renowned dishes with the distinctive flavours of Abajo. Guests will also have the choice to opt for a special pairings menu, comprised of unique serves from Mancino Vermouth, a collection of superior-quality artisanal vermouths, and RINOMATO, a line of aperitivi produced in the heart of Piedmont.
